Hi! I’m Tiffany. I’m prone to using a lot of words to make things sound lovely. Because of that I have written and re-written this about a dozen times just trying to be concise. You just want to know what you are getting into, right?

Here’s what you’ll find in my little space: writings/musings/stories on my life. I have a big(ish) family; five kids and my wonderful husband. Topics include: homeschool, travel, adoption, child loss/grief, marriage and living a Christ-centered life.

We strive to live simply and love well. Thanks for joining me on this journey. I’m so glad you’re here.

Pizza Stromboli Recipe- a favorite in our house!

Here's the original recipe for Pizza Stromboli. I usually change it depending on what ingredients I have at the time. The recipe is for 1 loaf but I ALWAYS double it, at least. Most of the time I make 2 double batches and if I don't need the second batch I freeze it (before or after it's baked, either way works just fine).

1 package active dry yeast (2 1/4 tsp)
3/4 c. warm water
1/2 Tbsp. honey (use your discretion - how strong is your honey? how sweet do you want it?)
2 1/2 c flour
Italian seasoning (once again, I just guess, I don't like it very strong)
(I add a little garlic, too)
salt
4 1/2 tsp. pizza sauce (I make my own and I add just enough to change the color of the dough)
pepperoni
shredded cheese (whatever kind I have at the time)
(other pizza toppings to taste - ham and pineapple is yummy, spinach is great, etc!)

Dissolve yeast in water, add honey.Combine 1 1/2 cups flour and seasonings. Add to yeast mixture, beat until smooth. Add pizza sauce. Sir in enough remaining flour to form a soft dough. Turn onto floured surface, knead until smooth. (I usually just knead it in the bowl and add a little extra flour so I don't have to get my counter messy twice.) Place in greased bowl, turning once. Cover and let rise until doubled (usually 1 hour). Punch dough down, turn onto floured surface. Roll into rectangle and add cheese, pepperoni, etc. Roll up, pinching together the ends. Place on greased baking sheet. Rise for 45 minutes (almost doubled again). Sprinkle with cheese. Bake at 350 for 25 - 30 minutes.

We usually dip it in leftover sauce, ranch,or  Monical's dressing.It's usually a lot of work the first couple of times but after that it's much easier and definitely worth it! So yummy! (Also a great way to hide spinach is actually in the dough, kids will never know) :)
