Hi! I’m Tiffany. I’m prone to using a lot of words to make things sound lovely. Because of that I have written and re-written this about a dozen times just trying to be concise. You just want to know what you are getting into, right?

Here’s what you’ll find in my little space: writings/musings/stories on my life. I have a big(ish) family; five kids and my wonderful husband. Topics include: homeschool, travel, adoption, child loss/grief, marriage and living a Christ-centered life.

We strive to live simply and love well. Thanks for joining me on this journey. I’m so glad you’re here.

Homemade Tortilla Shells

Before you make these, be prepared to be amazed! haha. Seriously, so much yummier than the store bought. :) And it goes great with the Taquito Chicken recipe.

Homemade Tortilla Shells

2 cups flour
1/2 tsp. salt
1 cup water
3 Tbsp. olive oil

In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface. Knead 5-6 times. Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7 inch circle.

In a large nonstick skillet coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned.
